Peanut Butter Crispy Rice Treats
Meet your new favorite kid-friendly treat – Peanut Butter Crispy Rice Treats! The combination of peanut butter, coconut oil (or butter), and honey enrobing crispy rice is as delightful as it is healthy! Add some chocolate if you choose, and it can’t be beat!
I adapted this from a recipe in The First Forty Days (which I recommend if you will be postpartum any time soon). I had never made Rice Krispie Treats for my kids because I have a thing against marshmallows. They are terrible for you, and they are super sticky and messy if you use them to make Rice Krispie Treats. (I know — I made them plenty growing up.) My kids can eat marshmallows out of the house, but we rarely have them in the house. Thanks to this recipe, they still get Crispy Rice Treats!
Peanut Butter Crispy Rice Treats give you the comfort of the familiar treat, without the marshmallow ingredients or mess. They are no-bake, gluten-free, dairy-free, and vegan. My kids actually prefer them and so do I!
Peanut Butter Crispy Rice Treats
A healthy -- and more delicious -- version of a favorite treat! Gluten-free, dairy-free, and vegan too!
Ingredients
- 1 c natural peanut butter
- 1/2 c butter or coconut oil
- 1/2 c honey
- 2 1/2 c crispy rice (white or brown)
- pinch of salt
- Optional
- 1 c chocolate chips
Instructions
- Melt peanut butter, oil/butter, and honey. Add salt and mix well.
- Put the crispy rice in a large bowl. Pour peanut butter mixture and mix well.
- Spread into an oiled pan. For thin bars, use a 9 x 13. For thicker, use 9 x 9.
- Chill in the refrigerator for 2 hours or more to set. Cut into bars.
Notes
I have used chocolate chips in three different ways.
1. Sprinkle 1 c chocolate chips on the bottom of pan and put crispy rice mix on top. (My favorite option.)
2. Sprinkle 1 c chocolate chips on top of the crispy rice mix and push in.
3. Melt 1 c chocolate chips with additonal 1/4 c oil or peanut butter. Spread on top of crispy rice mix.
