Tomato Rice Soup
A comforting tomato soup with brown rice, white beans, and spinach for a well-rounded and satisfying meal.
My family have nicknamed this “Christmas Soup” because it is red and green and I make it often during Advent. It sounds kind of funny during Lent, but it is a Lenten staple.
This recipe originated from the cookbook Veganomicon. But I found roasting two head of garlic ahead of time for 45 minutes (and then squeezing out all the garlic) a bit too time-intensive without the payoff. Also, I added white beans and spinach to add protein and a vegetable.
Tomato Rice Soup
A comforting tomato soup with brown rice, white beans, and spinach for a well-rounded and satisfying meal.
Ingredients
- 1 T oil
- 1 onion, diced
- 6 cloves garlic, minced
- 1 c long grain brown rice
- 2 t dried basil
- 1 t dried oregano and dried dill, each
- 2-3 t salt
- 2 - 28 oz cans crushed tomatoes
- 4 c cooked white beans (about 2 cans, drained)
- 1 - 10 oz package chopped frozen spinach
Instructions
- Heat oil over medium heat in a large pot. Add onion and cook for a few minutes.
- Add the garlic, herbs, and salt. Cook for a minutes
- Add brown rice and stir to coat well.
- Add the crushed tomatoes. Fill each can with water and add the water to the pot.
- Bring to a boil. Reduce heat and simmer, covered, for 45 minutes, or until rice is cooked.
- Add beans and spinach and stir well. Allow to cook for a couple minutes to heat through.
- Taste and season with more salt if desired.
Notes
- I like to soak brown rice in water overnight. If you do that, drain and rinse before adding to the pot. It also may reduce cook time.
- Do not substitute with white rice as it gets too mushy.
- You can substitute the rice with noodles of your choice, only simmer until noodles are done according to the package.

I had to laugh when I saw this recipe- when I was single I made canned tomato soup, with rice and frozen mixed vegetables for dinner more times than I’d like to admit! : ). It was filling, quick and delicious though. I will definitely try your homemade version for my family!
