Vegan Banana Brownies

Cocoa and bananas blend together to make these ultra-fudgy vegan brownies!
I can’t remember where this recipe originated, but I vaguely remember very much experimenting with an online recipe and then handwriting my version. Besides being vegan and lenten, it has no added flour — just what’s already in the sourdough starter. Plus, they are a great way to use up overripe bananas!
Vegan Banana Brownies

Cocoa and bananas blend together to make these ultra-fudgy vegan brownies!
Ingredients
- 1/2 c coconut sugar (or a bit less of white sugar)
- 1/2 c coconut oil
- 4 very ripe bananas
- 1/2 c cocoa powder
- 1/8 t salt
- 1/2 t baking soda
- 1/2 t vanilla
- 1/2 c sourdough starter (fed or unfed)
- 1/4 - 1/3 c chocolate chips
Instructions
- In a small saucepan on low, melt coconut oil and sugar together.
- Meanwhile, in a medium size bowl, blend bananas by hand or with a stand mixer.
- Add oil and sugar mixture and mix.
- Add cocoa, salt, and baking soda and mix.
- Add vanilla and starter and mix.
- Pour into an 8 x 8 baking pan. Sprinkle chocolate chips on top.
- Bake at 350 degrees for 25-20 minutes.
Notes
- You can used frozen bananas. Simply thaw them first and drain some of the liquid.
- They will come out of the oven risen like a cake, but deflate as they cool and become very fudgy.
- The banana flavor is very noticable.
